
Vegetable Noodle Soup

Servings: 6-8 bowls of soup



INGREDIENTS:
42 oz liquid (2 cups/16 oz broth and the rest water
4 green onions
1 shallot
1 clove garlic
2 stalks celery
2 medium carrots or 1 large, peeled
4-5 oz. green cabbage
2 Tbsp sunflower oil
1.5 tsp salt
1 package of gluten free pasta
Optional: 8 oz of chopped cooked chicken or beef

1) Place onions, shallot, and garlic in Thermomix and chop 5 seconds/ speed 7.
2)Cut carrot, cabbage, and celery into large chunks and add to mixing bowl. Chop 5 seconds/ speed 7.
3) Add oil and sautee for 2 minutes/ 250° F/ speed 2.
4) Add liquid and salt and cook for 15 minutes/ 212° F/speed 1
5) With measuring cup on, puree for 30 seconds/ speed 6.
6) Then add pasta and cook at 212° F, according to package. 6-10 minutes/reverse/ speed 1
7) Optional: add chopped chicken or beef.
8) Serve warm.
