
Granola Bars

INGREDIENTS:
3/4 cups rolled oats
3/4 cups puffed rice
1/2 cup puffed millet or oat bran
1/3 cup and 2 Tbsp teff flour
1/3 cup raw cashews or sunflower seeds (coarsely chopped)
1/3 cup syrup from tinned pears in lite syrup
2 tablespoons brown sugar (softly packed)
2 tablespoons golden syrup
1 teaspoon vanilla extract
Optional fried fruit:
2/3 cups dried fruit - apple, pear, banana... (chopped into small pieces)

1.Preheat the oven to 350°C. Line a baking tin with parchment paper.
2. Place the oats on a baking tray and toast in the oven for about 10 minutes or until the oats are lightly browned and fragrant.
3.Transfer to a large mixing bowl and add the flour, puffed rice, puffed millet, dried fruit, and cashews.
4.Combine the pear syrup, brown sugar and golden syrup in a small saucepan. Cook over a medium heat until the brown sugar has dissolved. Remove from the heat and stir in the vanilla extract. Pour the syrup over the oat mixture, stirring to coat.
5.Spoon the oat mixture onto the prepared baking tin. Place a piece of parchment paper on top, and use hands to press the mixture into an even layer.
6. Cut the mixture into 10 bars in the pan.
7.Bake for about 15 minutes or until firm. Using the parchment paper, carefully lift out the granola cake and cool on a wire rack. When cool break up the bars.
8.Store in an air-tight container.
