Banana Bread

( Oat - Chickpea - Quinoa )

Servings: 1 Loaf (15 - 18 Slices)

INGREDIENTS:

1 cups gluten free oats
1/2 cup quinoa flour
1/2 cups garbanzo bean flour
1.5 teaspoons baking soda
1 pinch sea salt
3/4 cup kefir
3 ripe bananas  mashed
1/2 cup butter melted
2 organic eggs
6 tbsp or 3/8 cups maple syrup
1 teaspoon vanilla extract

1) Preheat the oven to 350 degrees F.

2) Grease a 9 x 5" loaf pan and/or line with parchment paper.

3) Grind 1 cup of oats and 1/4 cup quinoa into flour, 7 seconds/speed 10.
4) Combine flour, soda, and salt. Mix well (10 seconds at speed 2)

5) Mix all other ingredients into the flour/kefir mixture. 20 seconds/speed 5

6) Scrape sides of bowl and repeat, 20 seconds/speed 5.

7) Pour the batter into the prepared pan and bake at 350°F for about 53-55 minutes, or until a toothpick, inserted into the center of the loaf, comes out clean.

8) Cool for 20 minutes before removing from the loaf pan.
